What each game says about it, in the games' own words.

SunIt eats berries and stores their seeds in its beak. When it encounters enemies or prey, it fires off all the seeds in a burst.
MoonBy bending its beak, it can produce a variety of calls and brand itself a noisy nuisance for its neighbors.
Ultra SunIt can bend the tip of its beak to produce over a hundred different cries at will.
Ultra MoonFrom its mouth, it fires the seeds of berries it has eaten. The scattered seeds give rise to new plants.

Official data here is present-day reference data from PokéAPI, not a snapshot of any one game's era — the Fairy type and hidden abilities arrived partway through the series, so a difference against an older game can belong to the series rather than to that ROM hack.
