What each game says about it, in the games' own words.

SunWith a flashing slash of its giant sharp claws, it cleaves seawater—or even air—right in two.
MoonIt battles skillfully with its six arms, but spends most of its time peacefully meditating in caves deep beneath the sea.
Ultra SunThe shell covering its body is as hard as diamond. This Pokémon will do anything it takes to win.
Ultra MoonIts claws, which it can extend and retract at will, are its greatest weapons. Golisopod is sometimes accompanied by Wimpod.

Official data here is present-day reference data from PokéAPI, not a snapshot of any one game's era — the Fairy type and hidden abilities arrived partway through the series, so a difference against an older game can belong to the series rather than to that ROM hack.
